This skill is traditionally passed down through generations, making it no surprise that these two are actually uncle and nephew! Before infusing the Sel Marin Gris (gray sea salt) with Piment d'Espelette, the salt is dried using a solar dryer (innovative, right?), allowing it to retain a hint of natural moisture.
